One of the best ways to stay in shape is to eat five small, protein-rich meals a day. These black bean lettuce wraps are healthy, and you can share those extra servings with the family or spread it out across a few meals!
(Serves about 4)
3 T avocado oil
2 boneless skinless chicken breast
2/3 cup fresh salsa
1 can of black beans (drained)
2 cups of quinoa and brown rice (cooked)
8 lettuce leafs (rinsed)
Cook your chicken breasts in a large pan with avocado oil on low-medium. Once chicken is cooked, remove from pan and cut into bite size pieces. Put the chicken back in the pan and add the fresh salsa and black beans, and cook on medium-high for about 8 minutes.
Feel free to add corn, peppers or caramelized onions to your chicken and beans.
Fill your lettuce leafs with the cooked quinoa/brown rice and your chicken, top with cilantro, fresh lime juice, avocados, or any vegetables of your choice!
