2 envelopes unflavored gelatin

Directions
Bring 1 c of coconut water to boil. In a separate bowl, mix remaining coconut water, stevia, and gelatin. Stir until gelatin has fully dissolved.
Pour into loaf pan and refrigerate about 3 hours until set. Cut into 8 squares and top with fresh berries if desired. Enjoy!

2 c pineapple juice
1 tsp. liquid stevia
2 envelopes unflavored gelatin
Bring 1 c pineapple juice to boil. Add gelatin and stevia to remaining juice and let sit for 1 minute.
Add hot juice to gelatin mixture and stir until completely dissolved. Pour into loaf pan and refrigerate about 3 hours. Cut into 8 squares and enjoy!

Raspberry Lemonade Cups

1/2 c organic raspberry lemonade
1/2 packet unflavored gelatin

Directions
Bring 1/4 of raspberry lemonade to boil. Add gelatin to remaining lemonade and let sit for 1 minute.
Add hot mixture to gelatin mixture and stir until gelatin has complete dissolved. Divide between 2 mini mason jars and refrigerate about 3 hours, or until set. Enjoy!
Serves 2. Serving size: 1 mini mason jar. Calories per serving: 35 / Protein 1g / Carbs 7g / Fat 0g

Cherry Gummy Bears

1 tsp. liquid stevia
3 packets unflavored gelatin

Directions
Combine all ingredients in saucepan over medium heat. Whisk for 3-5 minutes until all powders have dissolved. Pour into gummy bear mold (or ice cube tray) and refrigerate for 10 minutes, or until set.

2 tbsp. shredded parmesan

Directions
Preheat oven to 350 degrees F
Chop carrots into sticks. Toss in olive oil, parmesan, and rosemary. Spread onto baking sheet in an even layer and bake for 30 minutes, or until desired crispyness. Enjoy!
