Coconut Lime Bread


  • 1 1/2 c whole wheat flour
  • 1 1/2 tsp. baking powder
  • 2 eggs

  • 2 tbsp. coconut oil
  • 1 tsp. vanilla extract
  • 1/4 c unsweetened shredded coconut


1. Preheat oven to 350 degrees and spray loaf pan with nonstick cooking spray. Whisk whole wheat flour and baking powder together.

2. In a separate bowl whisk eggs, salt, lime zest, and stevia until combined. Add coconut milk and vanilla extract and stir until incorporated. Pour flour mixture into the egg mixture and stir until just combined. Pour into loaf pan and bake for 50 minutes to an hour, or until a toothpick comes out clean.

3. Whisk together canned coconut milk and Coconut Lime Idealboost and drizzle over bread. Cut into 8 slices and enjoy!
