One of the best ways to stay in shape is to eat five small, protein-rich meals a day. These black bean lettuce wraps are healthy, and you can share those extra servings with the family or spread it out across a few meals!
(Serves about 4)
3 tbsp. avocado oil
2 boneless skinless chicken breast
2/3 c fresh salsa
1 can of black beans (drained)
2 c of quinoa and brown rice (cooked)
8 lettuce leaves (rinsed)
Cook your chicken breasts in a large pan with avocado oil on low-medium. Once the chicken is cooked, remove from pan and cut into bite-size pieces. Put the chicken back in the pan and add the fresh salsa and black beans, and cook on medium-high for about 8 minutes.
Feel free to add corn, peppers or caramelized onions to your chicken and beans.
Fill your lettuce leaves with the cooked quinoa/brown rice and your chicken, top with cilantro, fresh lime juice, avocados, or any vegetables of your choice!
