National Caramel Popcorn Day Recipe

Happy National Caramel Popcorn Day!!!! It’s my favorite day of the YEAR. Okay, maybe that’s a little bit of an overstatement, but I love caramel popcorn.

I’m in the middle of my weight loss journey, so I can’t go eating buckets of caramel popcorn like I wish I could. Way too much sugar, not enough protein.

But when IdealShape released this DELICIOUS Salted Caramel Popcorn recipe, I could not resist. It’s so yummy & uses one of my favorite IdealShake flavors, Salted Caramel! I made up a big batch of this and portioned it out for some snacks during the week. Try it out!

Salted Caramel Popcorn

Ingredients

½ c organic coconut sugar

¼ c unsweetened coconut milk

1 scoop Salted Caramel IdealShake

8 c air popped popcorn

Directions

  1. Heat coconut sugar and coconut milk over medium heat until boiling. Reduce heat and simmer for about 10 minutes.
  2. Remove from heat and mix in Salted Caramel IdealShake until fully powder has dissolved fully.
  3. Pour over popcorn and mix until all popcorn is coated. Pour onto wax paper and let cool until caramel has set. Enjoy!

Serves 4 . Serving size: 2 cups. Calories per serving: 180 / Protein 5g / Carbs 39g / Fat 2g
